Preparation
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

- In a large bowl, toss the sweet potato rounds with olive oil, salt, and black pepper until evenly coated.
- Arrange the seasoned sweet potato rounds in a single layer on the prepared baking sheet.
- Bake for 15-20 minutes, flipping halfway through, until they are tender and slightly caramelized.
- In a small bowl, combine the crumbled feta cheese and honey.
Serving
- Once the sweet potato rounds are done, transfer them to a serving platter.
- Spoon the honey-feta mixture over each warm sweet potato round and garnish with fresh chopped parsley before serving.
Notes
For extra crispiness, broil the sweet potato rounds for the last 1-2 minutes, watching carefully to prevent burning. You can also add a pinch of chili flakes to the honey-feta mixture for a touch of heat.
