  • 2 lbs chicken breast cooked and shredded
  • 5 large tortillas
  • 1 medium red bell pepper thinly sliced
  • 1 cup carrots shredded
  • 0.5 cup cucumber julienned
  • 0.25 cup fresh cilantro chopped
Peanut Sauce
  • 0.5 cup peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tsp sesame oil
  • 1 tsp ginger grated
  • 1 clove garlic minced
  • 2 tbsp water or more, to thin
Garnish (Optional)
  • 0.25 cup Crushed peanuts
  • 1 medium Lime wedges

Method
 

Preparation
  1. Cook and shred chicken breast if not already prepared.
  2. Prepare all vegetables by thinly slicing the red bell pepper, shredding the carrots, julienning the cucumber, and chopping the fresh cilantro.
Make Peanut Sauce
  1. In a medium bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, sesame oil, grated ginger, and minced garlic.
  2. Gradually add water, one tablespoon at a time, until the sauce reaches your desired consistency.
Assemble Wraps
  1. Lay out each tortilla and spread a generous amount of peanut sauce over the entire surface.
  2. Evenly distribute the shredded chicken and prepared vegetables (bell pepper, carrots, cucumber, cilantro) across the center of each tortilla.
  3. Fold in the sides of the tortilla, then tightly roll it up from the bottom to create a wrap.
Serve
  1. Slice each wrap in half diagonally if desired and serve immediately.
  2. Optionally, garnish with crushed peanuts and serve with lime wedges.

Notes

For meal prep, you can prepare the chicken and sauce in advance. Assemble the wraps just before serving to prevent them from getting soggy. Adjust the spice level by adding a pinch of red pepper flakes to the peanut sauce.
