  • 4 oz Ahi tuna, sushi-grade, cubed
  • 2 tbsp Soy sauce
  • 1 tsp Sesame oil
  • 1 tsp Rice vinegar
  • 2 tbsp Green onions, sliced
  • 1 tsp Sesame seeds
  • 1 each Avocado, sliced
  • 0.5 cup Cucumber, thinly sliced
  • 0.5 cup Edamame, shelled

Method
 

Preparation
  1. Prepare the sushi rice according to package instructions and let it cool.
  2. In a medium bowl, combine the cubed ahi tuna, soy sauce, sesame oil, and rice vinegar.
  3. Gently toss to coat the tuna and set it aside to marinate for a few minutes.
Assemble
  1. Divide the cooled sushi rice evenly into two serving bowls.
  2. Arrange the marinated tuna, sliced avocado, cucumber, and edamame over the rice.
  3. Garnish with sliced green onions and sesame seeds before serving.

Notes

For an extra kick, add a drizzle of sriracha or spicy mayo. You can also customize your poke bowl with other vegetables like shredded carrots or radishes.
