  • 2 tbsp all-purpose flour
  • 1 large egg
  • 2 tbsp milk
  • 1 tbsp unsalted butter

  1. Preheat your oven to 425°F (220°C) with a 6-inch cast-iron skillet inside.
  2. Whisk together the flour, egg, milk, and a pinch of salt until smooth.
  3. Carefully remove the hot skillet, add the butter, and swirl to coat the bottom.
  4. Pour the batter into the hot skillet and immediately return it to the oven.
  5. Bake for 12-15 minutes, or until the pancake is puffed and golden brown, then serve immediately with your favorite toppings.

Notes

For extra flavor, add a dash of vanilla extract to the batter. Serve with fresh fruit, powdered sugar, or maple syrup.
