Ingredients
  

Base
  • 1 cup Cooked white or brown rice
  • 0.5 cup Black beans or pinto beans (canned, rinsed, and drained)
Protein (optional)
  • 4 oz Cooked chicken, steak, or plant-based protein
Salsa and Toppings
  • 2 tbsp Pico de gallo or salsa
  • 2 tbsp Guacamole
  • 1 tbsp Sour cream or Greek yogurt
  • 0.5 cup Shredded lettuce
  • 2 tbsp Shredded cheese
  • 1 tbsp Chopped cilantro
  • Lime wedges for serving
For serving
  • 2 tbsp Corn salsa (optional)

Method
 

Assemble the base
  1. In a large bowl, combine the cooked rice and drained beans to form the base of your burrito bowl.
Add protein (optional)
  1. If desired, add your choice of cooked protein, such as chicken, steak, or a plant-based alternative, over the rice and beans.
Layer on the toppings
  1. Arrange the pico de gallo, guacamole, sour cream or Greek yogurt, shredded lettuce, shredded cheese, and chopped cilantro on top of the protein and base ingredients.
  2. For an extra burst of flavor, you can also add corn salsa if desired.
Serve
  1. Serve the burrito bowl immediately with lime wedges on the side for squeezing over the top.

Notes

For extra flavor, warm up the beans and rice slightly before assembling. Feel free to customize with your favorite toppings like pickled jalapeƱos or hot sauce.
