  • 2 cups all-purpose flour

  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups milk
  • 2 large eggs
  • 1 teaspoon vanilla extract

Preparation
  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, whisk together the milk, eggs, and vanilla extract. Gradually add the wet ingredients to the dry ingredients, mixing until just combined and smooth.
Cooking
  1. Heat about 2-3 inches of vegetable oil in a large deep skillet or Dutch oven to 375°F (190°C).
  2. Pour the batter into a funnel with a narrow opening (or a piping bag with a small hole). Hold the funnel over the hot oil, blocking the opening with your finger. Release your finger and move the funnel in a circular motion, overlapping the batter to create a round, lacy cake. Fry for 1-2 minutes per side until golden brown.
  3. Carefully remove the funnel cake from the oil and place it on a wire rack lined with paper towels to drain excess oil. Dust with powdered sugar immediately and serve warm.

Notes
