Preparation
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together the milk, eggs, and vanilla extract. Gradually add the wet ingredients to the dry ingredients, mixing until just combined and smooth.
Cooking
- Heat about 2-3 inches of vegetable oil in a large deep skillet or Dutch oven to 375°F (190°C).
- Pour the batter into a funnel with a narrow opening (or a piping bag with a small hole). Hold the funnel over the hot oil, blocking the opening with your finger. Release your finger and move the funnel in a circular motion, overlapping the batter to create a round, lacy cake. Fry for 1-2 minutes per side until golden brown.
- Carefully remove the funnel cake from the oil and place it on a wire rack lined with paper towels to drain excess oil. Dust with powdered sugar immediately and serve warm.
Notes
For extra flavor, try adding a pinch of cinnamon or nutmeg to the batter. You can also experiment with different toppings like fruit compote, chocolate sauce, or whipped cream.
