Ingredients
  

Salad
  • 1 bunch kale, stems removed and chopped
  • 1 cup cherry tomatoes, halved
  • 0.5 cup cucumber, diced
  • 0.25 cup red onion, thinly sliced
  • 0.5 cup feta cheese, crumbled
Lemon Dressing
  • 3 tbsp fresh lemon juice
  • 2 tbsp extra virgin olive oil
  • 1 tsp Dijon mustard
  • 1 tsp honey or maple syrup
  • 1 clove garlic, minced
  • 0.25 tsp salt
  • 0.125 tsp black pepper

Method
 

Prepare the Kale
  1. Wash and dry the kale thoroughly, then remove the tough stems and chop the leaves into bite-sized pieces. Place the chopped kale in a large mixing bowl.
Massage the Kale
  1. Drizzle a small amount of olive oil (about 1 teaspoon) over the kale and gently massage it with your hands for 1-2 minutes until it softens. This step helps to tenderize the kale and reduce its bitterness.
Prepare the Dressing
  1. In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, honey or maple syrup, minced garlic, salt, and black pepper until well combined.
Assemble the Salad
  1. Add the halved cherry tomatoes, diced cucumber, and thinly sliced red onion to the bowl with the massaged kale. Pour the lemon dressing over the salad.
Toss and Serve
  1. Toss everything together until the vegetables are evenly coated with the dressing. Sprinkle with crumbled feta cheese before serving.

Notes

For extra crunch, you can add some toasted nuts or seeds to the salad. You can also customize the vegetables based on what you have available.
