  • 2 lbs chicken breast
  • 8 cups chicken broth
  • 2 cups carrots chopped
  • 2 cups celery stalks chopped
  • 1 large onion chopped
  • 3 garlic cloves minced
  • 1 bay leaf
  • 1 tsp dried thyme
  • salt to taste
  • black pepper to taste
  • 4 oz egg noodles

Preparation
  1. Place chicken breasts, chicken broth, chopped carrots, celery, onion, minced garlic, bay leaf, and dried thyme into the slow cooker pot.
  2. Season generously with salt and black pepper according to your preference.
  3. Cover the slow cooker with its lid.
Cooking
  1. Cook on low for 4-6 hours or on high for 2-3 hours, allowing the chicken to become very tender and easily shreddable.
  2. Carefully remove the cooked chicken breasts from the slow cooker and shred them using two forks.
  3. Return the shredded chicken to the slow cooker and stir in the egg noodles.
  4. Continue cooking for another 15-20 minutes, or until the egg noodles are tender.
Serving
  1. Remove the bay leaf before serving the hot soup.
  2. Taste and adjust seasonings if necessary, then ladle into bowls and enjoy.

Notes

For extra flavor, you can sauté the vegetables briefly before adding them to the slow cooker. Feel free to add other vegetables like potatoes or corn. This soup also freezes well for future meals.
