  • 12 pc large mushrooms
  • 8 oz cream cheese, softened
  • 0.5 cup shredded Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 0.25 cup breadcrumbs
  • salt and pepper to taste

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and wipe the mushrooms clean with a damp cloth, then carefully remove the stems and finely chop them.
  2. In a bowl, combine the softened cream cheese, Parmesan cheese, minced garlic, chopped parsley, chopped mushroom stems, breadcrumbs, salt, and pepper, mixing until well combined.
Stuffing & Baking
  1. Generously spoon the cheese mixture into each mushroom cap, mounding it slightly.
  2. Arrange the stuffed mushrooms on a baking sheet and bake for 20-25 minutes, or until the mushrooms are tender and the filling is golden brown and bubbly.

Notes

For an extra kick, add a pinch of red pepper flakes to the filling. These mushrooms are best served warm as an appetizer or side dish. Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
