Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Set aside.
Mixing
- In a large bowl, mash the ripe bananas with a fork, then stir in the granulated sugar.
- Beat in the egg, vegetable oil, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined; do not overmix.
Baking
- Pour the batter into the prepared loaf pan and bake for 50-60 minutes.
- Check for doneness by inserting a toothpick into the center; it should come out clean.
Cooling
- Let the banana bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
