  • 2 tbsp sugar
Filling
  • 24 oz cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 0.5 cup sour cream
  • 1 tsp vanilla extract

Method
 

Preparation
  1. Preheat oven to 325°F (160°C) and grease a 9-inch springform pan.
  2. Combine graham cracker crumbs, melted butter, and sugar, then press firmly into the bottom of the prepared pan.
Making the Filling
  1. Beat softened cream cheese and sugar until smooth and creamy.
  2. Add eggs one at a time, mixing well after each addition.
  3. Stir in sour cream and vanilla extract until just combined.
Baking
  1. Pour the filling over the crust and bake for 50-60 minutes, or until the edges are set and the center jiggles slightly.
  2. Turn off the oven, prop the door open slightly, and let the cheesecake cool in the oven for 1 hour before transferring to a wire rack to cool completely. Refrigerate for at least 4 hours, or preferably overnight, before serving.
