  • 6 cups chicken broth
  • 2 cups cooked chicken shredded
  • 3 cups egg noodles
  • 1 cup carrots sliced
  • 1/2 cup celery sliced
  • 1/4 cup onion diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley chopped

Method
 

Prepare the Soup
  1. In a large pot, combine chicken broth, sliced carrots, sliced celery, and diced onion.
  2. Bring the mixture to a boil, then reduce heat and simmer for 10 minutes, or until vegetables are tender.
  3. While the soup simmers, cook the egg noodles according to package directions in a separate pot of boiling water; drain and set aside.
  4. Add shredded cooked chicken, cooked egg noodles, salt, and black pepper to the simmering soup.
  5. Continue to simmer for an additional 2-3 minutes, allowing all ingredients to heat through.
Serve
  1. Stir in fresh chopped parsley just before serving.
  2. Serve hot, garnished with croutons if desired.

Notes

For extra flavor, use homemade chicken broth. You can also add other vegetables like peas or corn if desired. If you don't have cooked chicken, you can cook chicken breast in the broth during the simmering stage, then shred it before adding it back to the soup.
