Preparation
- Whisk together flour, cocoa powder, baking powder, and salt in a medium bowl; set aside.
- In a large bowl, whisk together granulated sugar, vegetable oil, eggs, and vanilla extract until well combined.
Mixing and Chilling
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined and no streaks of flour remain.
- Cover the dough and chill in the refrigerator for at least 30 minutes, or until firm enough to handle.
Baking
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Place confectioners' sugar in a shallow bowl. Roll tablespoon-sized portions of dough into balls, then roll each ball generously in the confectioners' sugar to coat completely.
- Place coated dough balls 2 inches apart on the prepared baking sheets and bake for 9-12 minutes, or until the edges are set and the centers are still slightly soft.
- Let cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
Notes
For extra chocolate flavor, add 1/2 cup of chocolate chips to the dough with the dry ingredients. Ensure the dough is thoroughly chilled to prevent excessive spreading during baking.
