Prepare the Filling
- Preheat your oven to 375°F (190°C) and grab an 8x8 inch baking dish.
- In a large bowl, mix the peach slices with sugar, flour, lemon juice, and cinnamon until the peaches are well coated.
- Pour this peach mixture into your prepared baking dish and spread evenly.
Make the Topping
- In another bowl, whisk together the flour, sugar, baking powder, and salt.
- Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
Combine and Bake
- In a small bowl, whisk the milk and egg together, then add it to the dry ingredients, mixing until just combined.
- Spoon the topping evenly over the peach filling, and sprinkle with turbinado sugar.
- Bake for 35-45 minutes, or until the topping is golden brown and the filling is bubbly.
Serve
- Let the cobbler cool slightly before serving warm, optionally with a scoop of vanilla ice cream.
Notes
For extra flavor, you can add a pinch of nutmeg to the peach filling. If using frozen peaches, do not thaw them beforehand; simply toss them with the other filling ingredients and proceed with the recipe. Serve with a dollop of whipped cream or a scoop of vanilla ice cream for a decadent dessert.
