  • 1 tablespoon lemon juice
  • 0.5 teaspoon cinnamon powder
For the topping
  • 1.5 cups all-purpose flour
  • 0.25 cup granulated sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 0.5 cup cold unsalted butter, cubed
  • 0.5 cup milk
  • 1 egg
  • 1 tablespoon turbinado sugar (for sprinkling)

Method
 

Prepare the Filling
  1. Preheat your oven to 375°F (190°C) and grab an 8x8 inch baking dish.
  2. In a large bowl, mix the peach slices with sugar, flour, lemon juice, and cinnamon until the peaches are well coated.
  3. Pour this peach mixture into your prepared baking dish and spread evenly.
Make the Topping
  1. In another bowl, whisk together the flour, sugar, baking powder, and salt.
  2. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
Combine and Bake
  1. In a small bowl, whisk the milk and egg together, then add it to the dry ingredients, mixing until just combined.
  2. Spoon the topping evenly over the peach filling, and sprinkle with turbinado sugar.
