Ingredients
  

For the Cookies
  • 2 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 1/2 cups unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 tsp vanilla extract
For the Frosting
  • 3 cups powdered sugar
  • 3-4 Tbsp milk
  • 1 tsp vanilla extract
  • few drops food coloring (optional)

Method
 

Making the Cookies
  1. Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
  2. Whisk together flour, baking soda, baking powder, and salt in a medium bowl.
  3. In a large bowl, cream together softened butter and granulated sugar until light and fluffy.
  4. Beat in the egg and vanilla extract to the butter mixture until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined and a soft dough forms.
  6. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for 8-10 minutes, or until the edges are lightly golden. Let them cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
Preparing the Frosting
  1. In a medium bowl, whisk together powdered sugar, milk, and vanilla extract until smooth.
  2. Add a few drops of food coloring, if desired, and mix until the color is even.
Assembling
  1. Once the cookies are completely cool, spread a thin layer of frosting over each cookie.

Notes

For best results, make sure your butter is truly softened to room temperature. You can substitute almond extract for vanilla extract in the frosting for a different flavor profile.
