Preparation
  1. Separate the fat from the turkey drippings using a fat separator or by chilling and skimming, then pour two tablespoons of the fat into a saucepan and heat over medium-low heat.
  2. Whisk the flour into the heated fat until a smooth paste forms, cooking for one minute.
  3. Gradually whisk in the turkey drippings and broth, bring the mixture to a simmer, and cook until the gravy thickens to your desired consistency, then season with salt and pepper to taste.

Notes

For extra flavor, consider adding a dash of sherry or a sprig of fresh thyme to the gravy while it simmers.
