Ingredients
  

Vegetable Base
  • 2 cups Carrots chopped
  • 2 stalks Celery Stalks chopped
  • 1 Yellow Onion chopped
  • 3 Garlic Cloves minced
Liquid & Protein
  • 6 cups Vegetable Broth
  • 1 cup Brown Lentils rinsed
Seasoning
  • 1 can Canned Diced Tomatoes 14.5 oz, undrained
  • 1 tsp Dried Thyme
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper

Method
 

Preparation
  1. Chop all vegetables: carrots, celery, onion, and mince the garlic. Rinse the lentils thoroughly under cold water.
Cooking
  1. Add the chopped vegetables and minced garlic to the slow cooker. Stir in the rinsed lentils, vegetable broth, diced tomatoes (undrained), dried thyme, salt, and pepper.
  2. Cover the slow cooker and cook on low for 4-6 hours or on high for 2-3 hours, until the lentils are tender and vegetables are soft.
Serving
  1. Stir before serving. Ladle the soup into bowls and enjoy warm.

Notes

For a thicker soup, mash a portion of the cooked lentils and vegetables against the side of the slow cooker pot before serving. This soup also freezes well for future meals.
