  • 2 lbs chicken breasts boneless, skinless
  • 6 cups chicken broth
  • 2 cups carrots sliced
  • 1 cup celery sliced
  • 2 cups potatoes diced
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 tsp dried thyme
  • 1 bay leaf
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

Instructions
  1. Add chicken breasts, chicken broth, carrots, celery, potatoes, onion, minced garlic, dried thyme, bay leaf, salt, and black pepper into the slow cooker.
  2. Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the chicken is cooked through and vegetables are tender.
  3. Remove the chicken breasts from the slow cooker and shred them using two forks; then return the shredded chicken to the soup.
  4. Remove the bay leaf before serving the soup.

Notes

For extra flavor, you can sauté the onion and garlic before adding them to the slow cooker. You can also add other vegetables like corn or peas during the last 30 minutes of cooking.
