Preparation
- Preheat your oven to 375°F (190°C) and prepare a 9x13 inch baking dish by lightly greasing it.
- In a large skillet, brown the ground beef over medium heat, then drain any excess fat.
- In a bowl, combine the cream of mushroom soup with water, stirring well to create a sauce.
- Layer half of the sliced potatoes evenly in the bottom of the prepared baking dish, followed by half of the sliced onions and carrots.
- Spread the browned ground beef over the vegetable layer, then season with salt and pepper.
- Top with the remaining half of the potatoes, onions, and carrots.
- Pour the cream of mushroom soup mixture evenly over the entire casserole.
Baking
- Cover the baking dish tightly with aluminum foil and bake for 30 minutes.
- Remove the foil and continue to bake for another 15-20 minutes, or until the vegetables are tender and the casserole is bubbly and lightly browned.
Serving
- Let the casserole rest for 5-10 minutes before serving hot.
Notes
For extra flavor, you can add a dash of garlic powder or onion powder to the ground beef while browning. Feel free to add other vegetables like bell peppers or green beans for added nutrition and color.
