  • 1.5 lbs ground beef
  • 4 medium potatoes sliced ½ inch thick
  • 2 onions sliced
  • 3 carrots sliced
  • 1 can cream of mushroom soup
  • 0.5 cup water
  • salt to taste
  • black pepper to taste

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and prepare a 9x13 inch baking dish by lightly greasing it.
  2. In a large skillet, brown the ground beef over medium heat, then drain any excess fat.
  3. In a bowl, combine the cream of mushroom soup with water, stirring well to create a sauce.
  4. Layer half of the sliced potatoes evenly in the bottom of the prepared baking dish, followed by half of the sliced onions and carrots.
  5. Spread the browned ground beef over the vegetable layer, then season with salt and pepper.
  6. Top with the remaining half of the potatoes, onions, and carrots.
  7. Pour the cream of mushroom soup mixture evenly over the entire casserole.
Baking
  1. Cover the baking dish tightly with aluminum foil and bake for 30 minutes.
  2. Remove the foil and continue to bake for another 15-20 minutes, or until the vegetables are tender and the casserole is bubbly and lightly browned.
Serving
  1. Let the casserole rest for 5-10 minutes before serving hot.

Notes

For extra flavor, you can add a dash of garlic powder or onion powder to the ground beef while browning. Feel free to add other vegetables like bell peppers or green beans for added nutrition and color.
