Make the Batter
- In a large bowl, whisk together all the dry ingredients until well combined.
- In a separate medium bowl, whisk together the milk, egg, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined, being careful not to overmix; a few lumps are okay.
Cook the Pancakes
- Heat a lightly oiled griddle or non-stick pan over medium heat.
- Pour about 1/4 cup of batter per pancake onto the hot surface.
- Cook for 2-3 minutes per side, or until golden brown and cooked through, then serve immediately.
Notes
For extra fluffy pancakes, let the batter rest for 5-10 minutes before cooking. This allows the baking powder and soda to activate properly.
