  • 2 cups shredded carrots
  • 0.5 cup chopped walnuts (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease and flour a 9x13 inch baking pan.

  3. In a separate bowl, beat the eggs, then stir in the vegetable oil and shredded carrots.
Baking
  1. Pour the wet ingredients into the dry ingredients and mix until just combined, then fold in the optional chopped walnuts.
  2. Spread the batter evenly into the prepared baking pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Cooling and Serving
