Breading
  • 0.5 cup all-purpose flour
  • 2 large eggs
  • 1 cup bread crumbs
  • 0.5 cup Parmesan cheese grated
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Sauce & Cheese
  • 2 cups marinara sauce
  • 1.5 cups mozzarella cheese shredded
  • 0.25 cup fresh basil chopped

  • 1 cup vegetable oil for frying

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet by lining it with parchment paper.
  2. Slice each chicken breast horizontally to create two thinner cutlets, then pound them to an even thickness of about 1/2 inch.
Breading
  1. Set up three shallow dishes: one with flour, one with beaten eggs, and one with a mixture of bread crumbs, Parmesan cheese, salt, and pepper.
  2. Dredge each chicken cutlet in flour, then dip in egg, and finally coat thoroughly with the bread crumb mixture.
Frying
  1. Heat vegetable oil in a large skillet over medium-high heat. Fry each breaded chicken cutlet for 3-4 minutes per side, until golden brown and cooked through.
  2. Remove the chicken from the skillet and place on the prepared baking sheet.
Baking
  1. Spread marinara sauce over each chicken cutlet, then top with shredded mozzarella cheese.
  2. Bake for 10-15 minutes, or until the cheese is melted and bubbly.
Finishing
  1. Garnish with fresh basil before serving.

Notes
