Preparation
- Preheat your oven to 400°F (200°C) and prepare a baking sheet by lining it with parchment paper.
- Slice each chicken breast horizontally to create two thinner cutlets, then pound them to an even thickness of about 1/2 inch.
Breading
- Set up three shallow dishes: one with flour, one with beaten eggs, and one with a mixture of bread crumbs, Parmesan cheese, salt, and pepper.
- Dredge each chicken cutlet in flour, then dip in egg, and finally coat thoroughly with the bread crumb mixture.
Frying
- Heat vegetable oil in a large skillet over medium-high heat. Fry each breaded chicken cutlet for 3-4 minutes per side, until golden brown and cooked through.
- Remove the chicken from the skillet and place on the prepared baking sheet.
Baking
- Spread marinara sauce over each chicken cutlet, then top with shredded mozzarella cheese.
- Bake for 10-15 minutes, or until the cheese is melted and bubbly.
Finishing
- Garnish with fresh basil before serving.
Notes
For extra flavor, add a pinch of garlic powder and dried oregano to the bread crumb mixture. Serve with your favorite pasta or a side salad.
