  • 1/2 cup packed light brown sugar

  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, oats, baking soda, cinnamon, and salt; set aside.
Mixing
  1. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  2. Beat in the egg and vanilla extract until well combined.
  3. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  4. Stir in the raisins.
Baking
  1. Drop spoonfuls of dough onto the prepared baking sheet, spacing them 2 inches apart.
  2. Bake for 10-12 minutes, or until the edges are golden brown and the centers are set.
  3. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For chewier cookies, use quick oats instead of old-fashioned rolled oats. You can also add chopped nuts for extra crunch.
