- Boil and mash the potatoes until smooth, then let them cool.

Shaping Gnocchi
- Roll small portions of dough into long ropes about 1.5 cm thick, then cut into 2 cm pieces.
- Create ridges by gently rolling each piece against a fork or gnocchi board, or leave them smooth.
Cooking
- Bring a large pot of salted water to a gentle boil, then cook the gnocchi in batches.
- The gnocchi are done when they float to the surface; remove them with a slotted spoon.
Serving
- Serve the gnocchi immediately with your favorite sauce.
Notes
For best results, use starchy potatoes. Avoid overworking the dough to keep the gnocchi tender. You can freeze uncooked gnocchi on a floured baking sheet before transferring to an airtight container.
