  • 1 can pineapple chunks (20 oz), drained
  • 0.5 cup teriyaki sauce
  • 1 bell pepper sliced (any color)
  • 0.5 onion sliced
  • 1 tbsp olive oil

  • cooked rice
  • sesame seeds for garnish

Method
 

Preparation
  1. Cut chicken breasts into 1-inch pieces and slice the bell pepper and onion.
  2. Heat olive oil in a large skillet or wok over medium-high heat.
Cooking
  1. Add chicken to the skillet and cook until browned on all sides, about 5-7 minutes. Remove chicken from the skillet and set aside.
  2. Add sliced bell pepper and onion to the skillet and cook until softened, about 3-5 minutes.
  3. Return chicken to the skillet and add the drained pineapple chunks and teriyaki sauce.
  4. Stir well and cook for another 5-7 minutes, or until the sauce thickens and the chicken is cooked through.
Serving
  1. Serve hot over cooked rice, if desired, and garnish with sesame seeds.

Notes

For a spicier kick, add a pinch of red pepper flakes with the teriyaki sauce. You can also add other vegetables like snap peas or broccoli florets for extra nutrition and flavor.
