Preparation
- Cut chicken breasts into 1-inch pieces and slice the bell pepper and onion.
- Heat olive oil in a large skillet or wok over medium-high heat.
Cooking
- Add chicken to the skillet and cook until browned on all sides, about 5-7 minutes. Remove chicken from the skillet and set aside.
- Add sliced bell pepper and onion to the skillet and cook until softened, about 3-5 minutes.
- Return chicken to the skillet and add the drained pineapple chunks and teriyaki sauce.
- Stir well and cook for another 5-7 minutes, or until the sauce thickens and the chicken is cooked through.
Serving
- Serve hot over cooked rice, if desired, and garnish with sesame seeds.
Notes
For a spicier kick, add a pinch of red pepper flakes with the teriyaki sauce. You can also add other vegetables like snap peas or broccoli florets for extra nutrition and flavor.
