- Heat olive oil in a large pot or Dutch oven over medium heat, then add the chopped onion and cook until softened, about 5 minutes.
- Stir in the minced garlic, chili powder, cumin, and oregano, cooking for another minute until fragrant.
- Pour in the chicken broth, diced tomatoes (undrained), rinsed black beans, and frozen corn.

Notes
For extra spice, add a pinch of cayenne pepper or a diced jalapeƱo with the onion. You can also use leftover rotisserie chicken for an even quicker prep time.
