  • 2 lbs potatoes peeled and diced
  • 1 cup mayonnaise
  • 2 stalks celery chopped
  • 0.5 cup red onion finely diced
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 2 tbsp fresh dill chopped
  • salt to taste
  • black pepper to taste

Method
 

Preparation
  1. Boil the diced potatoes in salted water until tender, then drain and let them cool completely.
  2. In a large bowl, whisk together mayonnaise, mustard, apple cider vinegar, salt, and pepper.
  3. Add the cooled potatoes, chopped celery, red onion, and fresh dill to the bowl.
  4. Gently fold all ingredients together until the potatoes are evenly coated.
  5. Cover the bowl and refrigerate the potato salad for at least 30 minutes before serving to allow the flavors to meld.

Notes

For best results, make the potato salad a few hours in advance to allow flavors to fully develop.
