  • 1 tbsp sesame oil
  • 2 garlic cloves minced
  • 1 tsp ginger grated
  • 2 eggs
  • 2 tbsp soy sauce
  • 1 cup frozen mixed vegetables
  • 2 green onions sliced

  • 1 tsp sesame seeds
  • 1 tsp sriracha or to taste

Method
 

Preparation
  1. Rice the cauliflower by pulsing florets in a food processor until they resemble rice grains, or use pre-riced cauliflower.
  2. Prepare your aromatics by mincing the garlic and grating the ginger.
Cooking
  1. Heat sesame oil in a large skillet or wok over medium-high heat.
  2. Add minced garlic and grated ginger, then sauté for 30 seconds until fragrant.
  3. Push the aromatics to one side, add the eggs to the other side, and scramble them for 1-2 minutes.
  4. Add riced cauliflower and frozen mixed vegetables to the skillet, cooking for 5-7 minutes until the cauliflower is tender-crisp.
  5. Stir in soy sauce and cook for another 1-2 minutes, ensuring everything is well combined and heated through.
  6. Remove from heat and garnish with sliced green onions, sesame seeds, and sriracha if desired.

Notes

For a spicier kick, add a pinch of red pepper flakes with the aromatics. This dish is highly customizable; feel free to add other vegetables like bell peppers or mushrooms.
