  • 1 lb chicken breast cut into strips
  • 2 medium bell peppers any color, sliced
  • 1 medium onion sliced
  • 2 tbsp fajita seasoning
  • 1 tbsp olive oil
  • 4 cups cooked rice for serving
  • 1 cup salsa for topping
  • 0.5 cup sour cream for topping
Optional Toppings
  • 1 medium avocado sliced
  • 0.5 cup queso fresco crumbled
  • 0.25 cup cilantro chopped
Marinade
  • 2 tbsp lime juice
  • 1 tsp garlic powder
For Serving
  • 1 tortilla chips bag

Method
 

Preparation
  1. Slice the chicken breast into thin strips, and then combine it with lime juice and garlic powder to marinate for at least 10 minutes.
Cooking
  1. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned, then remove it from the skillet.
  2. Add the sliced bell peppers and onion to the same skillet, cooking until they are tender-crisp. Stir in the fajita seasoning and cook for another minute.
  3. Return the cooked chicken to the skillet with the vegetables and mix everything together.
  4. Prepare your cooked rice.
Assembly
  1. Divide the cooked rice among individual bowls, then top with the chicken and vegetable mixture. Add salsa and sour cream, along with any optional toppings like avocado, queso fresco, and cilantro.
  2. Serve the fajita bowls immediately with tortilla chips on the side.

Notes

For extra spice, add a pinch of chili flakes to the fajita seasoning. You can also use corn tortillas instead of rice for a different serving option.
