  • 4 medium potatoes peeled and diced
  • 4 cups chicken broth
  • 1 cup milk
  • 0.5 cup heavy cream
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 cup Cheddar cheese shredded (for topping)
  • 4 strips bacon cooked and crumbled (for topping)
  • 2 tbsp fresh chives chopped (for topping)

Method
 

Preparation
  1. In a large pot, combine the diced potatoes and chicken broth; bring to a boil, then reduce heat and simmer until potatoes are tender, about 10-12 minutes.
  2. While potatoes are cooking, melt butter in a separate saucepan over medium heat; add chopped onion and cook until softened, about 3-5 minutes.
  3. Stir in minced garlic and cook for another minute until fragrant, then whisk in flour and cook for 1 minute to create a roux.
  4. Gradually whisk in milk and heavy cream until smooth; bring to a gentle simmer, stirring constantly, until the mixture thickens.
  5. Once potatoes are tender, mash some of them against the side of the pot with a spoon to thicken the soup, then pour the cream mixture into the pot with the potatoes.
  6. Stir in salt and pepper, and cook for an additional 2-3 minutes, ensuring the soup is heated through but not boiling.
  7. Serve hot, garnished with shredded Cheddar cheese, crumbled bacon, and fresh chives, if desired.

Notes

For a thicker soup, mash more potatoes. For a vegetarian option, use vegetable broth instead of chicken broth.
