Method
 

Preparation
  1. Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
  2. Combine graham cracker crumbs and melted butter, then press the mixture evenly into the bottom of the prepared springform pan to form the crust.
Baking
  1. In a large bowl, beat softened cream cheese and sugar until smooth and creamy.
  2. Gradually mix in the eggs one at a time, followed by vanilla extract and sour cream, until the filling is well combined.
  3. Pour the cheesecake filling over the crust in the springform pan and bake for 50-60 minutes, or until the edges are set and the center slightly jiggles.
  4. Turn off the oven and leave the cheesecake inside with the door ajar for 30 minutes, then remove and cool completely on a wire rack before refrigerating for at least 4 hours, or preferably overnight.

Notes
