Ingredients

Main Ingredients
  • 300 g pasta any shape
  • 250 g cherry tomatoes halved
  • 100 g spinach
  • 2 cloves garlic minced
  • 750 ml vegetable broth
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
Optional Garnishes
  • Parmesan cheese grated
  • fresh basil chopped

Equipment

  • large pot
  • stirring spoon

Method

Preparation
  1. Combine pasta, cherry tomatoes, spinach, minced garlic, vegetable broth, olive oil, salt, and black pepper in a large pot.
Cooking
  1. Bring the mixture to a boil over medium-high heat, then reduce to medium and simmer, stirring occasionally, until the pasta is al dente and most of the liquid has been absorbed (about 10-12 minutes).
Serving
  1. Remove from heat, let it sit for a few minutes, then serve immediately, garnished with Parmesan cheese and fresh basil if desired.

Notes

For extra flavor, you can add a pinch of red pepper flakes along with the other ingredients. Make sure to stir frequently to prevent the pasta from sticking to the bottom of the pot. Adjust ingredient quantities to your personal preference.
