Prepare Chicken
- Toss the chicken pieces with cornstarch until fully coated, then dip them in the beaten egg.
- Heat vegetable oil in a large skillet or wok over medium-high heat to 350°F (175°C).
Cook Chicken
- Fry chicken in batches for 3-5 minutes until golden brown and cooked through, then remove and drain on paper towels.
Make Sauce
- In a saucepan, combine orange juice, soy sauce, rice vinegar, sugar, ginger, garlic, and red pepper flakes (if using).
- Bring to a simmer over medium heat, then stir in the cornstarch slurry and cook until the sauce thickens.
Combine and Serve
- Add the cooked chicken to the sauce and toss to coat.
- Serve immediately over cooked rice and garnish with sliced green onions.
Notes
For extra crispiness, you can double-fry the chicken. Ensure the oil is hot enough to achieve a crispy exterior and fully cooked interior. Adjust red pepper flakes to your spice preference.
