  • 1 large tortilla
  • 2 eggs
  • 1/4 cup shredded cheese
  • 2 tbsp salsa
  • 1/4 cup cooked breakfast sausage
  • 1/4 cup avocado diced
  • 1 tsp oil or butter

Method
 

Cooking
  1. Heat oil or butter in a non-stick skillet over medium heat, then crack in the eggs and scramble them until cooked through.
  2. Lay the tortilla flat and sprinkle cheese over it, then microwave for 15-20 seconds to slightly melt the cheese.
  3. Spread the scrambled eggs evenly over the cheese on the tortilla.
  4. Add sausage, diced avocado, and salsa over the eggs.
  5. Fold in the sides of the tortilla, then tightly roll it from the bottom up to form a burrito.
  6. If desired, you can lightly toast the burrito in the skillet for a few minutes on each side until golden brown.

Notes

Customize your burrito with other fillings like black beans, corn, or hot sauce. For a healthier option, use whole wheat tortillas and lean protein.
