Preparation
- Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing and flouring them.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.
Mixing Wet Ingredients
- In a separate bowl, combine the buttermilk, vegetable oil, eggs, red food coloring, white vinegar, and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined and smooth.
Baking the Cake
- Divide the batter evenly between the prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
Making the Frosting
- While the cakes cool, beat the softened cream cheese and butter together in a medium bowl until creamy.
- Gradually add the powdered sugar and vanilla extract, beating until the frosting is light and fluffy.
Assembling the Cake
- Once the cakes are completely cool, spread a generous layer of cream cheese frosting over the top of one cake layer.
- Place the second cake layer on top and frost the top and sides of the entire cake with the remaining frosting.
- Garnish as desired and serve.
Notes
For best results, make sure your cream cheese and butter are at room temperature for the frosting. Do not overmix the cake batter, as this can lead to a dry cake. You can adjust the amount of red food coloring to achieve your desired shade of red. This cake can be stored in an airtight container at room temperature for up to 3 days or refrigerated for up to 5 days.
