  • 0.5 teaspoon vanilla extract

Equipment

  • Oven
  • Two 8-inch round cake pans
  • Large bowl
  • Whisk
  • Electric mixer

Method

Preparation
  1. Preheat your oven to 350°F (175°C) and grease and flour two 8-inch round cake pans.
Making the Cake
  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. Add the softened butter and mix until crumbly, then beat in the eggs one at a time.
  3. Gradually add milk and vanilla extract, mixing until just combined and then fold in the diced strawberries.
  4. Divide the batter evenly between the prepared pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Making the Frosting
  1. While the cake cools, beat the cream cheese and butter together until smooth and creamy.
  2. Gradually add the powdered sugar, then mix in the strawberry puree and vanilla extract until the frosting is light and fluffy.
Assembly
  1. Once the cake layers are completely cooled, spread a layer of frosting on the first cake layer, top with the second layer, and then frost the entire cake.

Notes

For extra strawberry flavor, you can use freeze-dried strawberry powder in the frosting. Ensure all ingredients are at room temperature for a smoother batter and frosting. Do not overmix the cake batter to keep it tender. Chill the frosted cake for at least 30 minutes before serving. For a decorative touch, garnish with fresh strawberry slices. Adjust sugar in frosting to your sweetness preference. Using a kitchen scale for dry ingredients ensures accuracy.
