  • 1 pound ground beef or turkey
  • 1 onion, chopped
  • 1 ounce taco seasoning mix
  • 1 ounce ranch seasoning mix
  • 15 ounces diced tomatoes with green chilies, undrained
  • 15 ounces corn, drained
  • 15 ounces black beans, rinsed and drained
  • 8 ounces tomato sauce
  • 2 cups water or beef broth

  • shredded cheddar cheese

  • crushed tortilla chips

Cooking Instructions
  1. In a large pot or Dutch oven, brown the ground beef or turkey and onion over medium heat, then drain any excess fat.
  2. Stir in the taco seasoning mix, ranch seasoning mix, diced tomatoes with green chilies, corn, black beans, tomato sauce, and water or beef broth.
  3. Bring the mixture to a simmer, then reduce heat, cover, and cook for at least 15-20 minutes to allow the flavors to meld.
  4. Serve hot and customize with your favorite toppings such as shredded cheese, sour cream, crushed tortilla chips, or diced avocado.

Notes

For a spicier kick, add a pinch of cayenne pepper or a chopped jalapeƱo with the onions. You can also vary the beans by adding kidney beans or pinto beans. This soup freezes well for future meals.
