This quick heirloom tomato tart is a perfect way to showcase the vibrant flavors of fresh summer tomatoes, all nestled in a flaky crust with savory fillings.

Ingredients
  

For the Crust
  • 1 sheet Puff pastry sheet
  • 1 Egg for egg wash
For the Filling
  • 2 medium Heirloom tomatoes sliced
  • 4 oz Goat cheese crumbled
  • 1/4 cup Fresh basil chopped
  • 1 tbsp Olive oil
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

  • Parchment paper
  • Sharp knife
  • Fork
  • Pastry brush

Method
 

Prepare the Crust
  1. Preheat your oven to 400°F (200°C) and gently unroll the puff pastry sheet onto a baking sheet lined with parchment paper.
  2. Score a 1-inch border around the edge of the pastry with a sharp knife, being careful not to cut all the way through, then prick the inside area with a fork.
Assemble and Bake
  1. Brush the scored border with a beaten egg for a golden finish.
  2. Evenly spread the crumbled goat cheese within the scored border, then arrange the sliced heirloom tomatoes on top of the cheese.
  3. Drizzle with olive oil, then season the tomatoes with salt and freshly ground black pepper.
  4. Bake for 25-30 minutes, or until the pastry is puffed and golden brown and the tomatoes are slightly softened.
  5. Remove from the oven, sprinkle with fresh basil, and let it cool slightly before slicing and serving.

Notes

For the best flavor, use ripe, in-season heirloom tomatoes of various colors. You can also experiment with different cheeses like feta or mozzarella. Ensure to not overcrowd the tart with too many tomatoes to allow for even baking and a crisp crust.
