Roasting Corn
- Preheat oven to 400°F (200°C) and place corn on a baking sheet. Roast for 15-20 minutes, or until lightly charred, turning occasionally.
Prepare Dressing
- While corn is roasting, whisk together mayonnaise, Dijon mustard, Worcestershire sauce, lemon juice, minced garlic, grated Parmesan cheese, olive oil, salt, and pepper in a small bowl until smooth.
Assemble Salad
- In a large bowl, combine chopped romaine lettuce, roasted corn kernels, and halved cherry tomatoes. Pour dressing over the salad and toss to coat.
Serve
- Top with shredded Parmesan cheese and croutons before serving.
Notes
For an extra smoky flavor, grill the corn instead of roasting it. You can also add grilled chicken or shrimp to make it a more substantial meal.
