  • 500 g Parsnips peeled and cut into1-inch pieces
  • 2 tbsp Olive oil
  • 1 tbsp Fresh thyme chopped
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. In a large bowl, toss the parsnips with olive oil, fresh thyme, salt, and pepper until evenly coated.
  3. Spread the parsnips in a single layer on the prepared baking sheet.
Roasting
  1. Roast for 20-25 minutes, or until golden brown and tender, turning halfway through.
Serving
  1. Serve hot as a delicious side dish.

Notes

For extra flavor, you can add a drizzle of maple syrup or honey before roasting.
