  • 1 lb linguine
  • 1.5 lb large shrimp, peeled and deveined
  • 0.5 cup unsalted butter
  • 4 cloves garlic, minced
  • 0.5 cup dry white wine or chicken broth
  • 0.25 cup lemon juice
  • 0.5 tsp red pepper flakes
  • 0.25 cup fresh parsley, chopped
  • Salt and black pepper to taste

Method
 

Cooking Steps
  1. Cook linguine according to package directions in a large pot of salted water. Reserve about 1 cup of pasta water before draining.
  2. While pasta cooks, melt butter in a large skillet over medium heat. Add minced garlic and red pepper flakes, cooking until fragrant, about 1 minute.
  3. Add shrimp to the skillet and cook for 2-3 minutes per side, until pink and opaque. Do not overcrowd; cook in batches if necessary.
  4. Pour in white wine (or broth) and lemon juice, bringing the mixture to a simmer. Cook for 2 minutes, allowing the sauce to reduce slightly.
  5. Add the cooked and drained linguine to the skillet with the shrimp and sauce. Toss to combine, adding some reserved pasta water if needed to create a more cohesive sauce.
  6. Stir in fresh parsley and season with salt and pepper to taste. Serve immediately.

Notes

For extra flavor, you can marinate the shrimp in a little lemon juice and garlic powder for 15 minutes before cooking. A splash of heavy cream can be added to the sauce for a richer taste, if desired.
