  • 4 cups rhubarb, chopped
  • 1 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 cup old-fashioned oats
  • 0.5 cup brown sugar, packed
  • 0.5 teaspoon cinnamon
  • 0.5 cup cold butter, cubed

Method
 

Rhubarb Crumble Instructions
  1. Preheat oven to 375°F (190°C). In a large bowl, combine chopped rhubarb, granulated sugar, and 2 tablespoons of flour.
  2. Spread the rhubarb mixture evenly into a 9x13 inch baking dish.
  3. In a separate bowl, mix oats, remaining flour, brown sugar, and cinnamon.
  4. Cut in the cold butter until the mixture resembles coarse crumbs.
  5. Sprinkle the crumble topping over the rhubarb.
  6. Bake for 35-45 minutes, or until the rhubarb is tender and the topping is golden brown.
  7. Serve warm with a scoop of vanilla ice cream or whipped cream, if desired.

Notes

For extra flavor, add a pinch of ginger or nutmeg to the rhubarb mixture. You can also substitute some of the granulated sugar with maple syrup or honey for a different sweetness profile.
