Rhubarb Crumble Instructions
- Preheat oven to 375°F (190°C). In a large bowl, combine chopped rhubarb, granulated sugar, and 2 tablespoons of flour.
- Spread the rhubarb mixture evenly into a 9x13 inch baking dish.
- In a separate bowl, mix oats, remaining flour, brown sugar, and cinnamon.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Sprinkle the crumble topping over the rhubarb.
- Bake for 35-45 minutes, or until the rhubarb is tender and the topping is golden brown.
- Serve warm with a scoop of vanilla ice cream or whipped cream, if desired.
Notes
For extra flavor, add a pinch of ginger or nutmeg to the rhubarb mixture. You can also substitute some of the granulated sugar with maple syrup or honey for a different sweetness profile.
