Method
 

Preparation
  1. Wash, peel, and cut the potatoes into 1-inch cubes, then place them in a large pot and cover with cold water and a pinch of salt.
  2. Bring the water to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are fork-tender but not mushy; drain and let them cool completely.
Making the Dressing
  1. In a medium bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, sugar, salt, and pepper until smooth and well combined.
Assembly
  1. In a large bowl, combine the cooled potatoes, chopped celery, diced red onion, and chopped hard-boiled eggs.
  2. Pour the dressing over the potato mixture and gently fold until all ingredients are evenly coated.
  3. Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld, then sprinkle with paprika before serving.

Notes

For extra flavor, you can add a pinch of celery seeds to the dressing or a tablespoon of pickle relish for a tangier taste. For a softer texture, some prefer to mash a small portion of the potatoes before mixing. Adjust seasoning to your preference.
