  • 2 lbs potatoes Yukon Gold or similar
  • 1 cup mayonnaise
  • 2 tbsp Dijon mustard
  • 1 stalk celery finely chopped
  • 0.25 cup red onion finely diced
  • 1 tbsp fresh dill chopped
  • salt and black pepper to taste

Method
 

Preparation
  1. Wash and peel the potatoes, then cut them into 1-inch cubes. Boil the potato cubes in salted water until tender, about 15-20 minutes, then drain and let them cool completely.
  2. In a large mixing bowl, whisk together the mayonnaise, Dijon mustard, and chopped dill.
  3. Add the cooled potatoes, chopped celery, and diced red onion to the bowl with the dressing. Gently mix until all ingredients are well combined and coated.
  4. Season with salt and black pepper to taste. Cover the bowl and refrigerate for at least 30 minutes before serving to allow the flavors to meld.

Notes

For best results, allow the potato salad to chill for at least an hour before serving to let the flavors meld.
