Preparation
- Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
- Boil the peeled and cubed sweet potatoes in a large pot of lightly salted water until they are tender when pierced with a fork, which typically takes 15-20 minutes.
- Drain the sweet potatoes thoroughly and return them to the empty pot.
Sweet Potato Base
- Mash the cooked sweet potatoes until smooth, then add melted butter, granulated sugar, milk, eggs, vanilla extract, and salt.
- Stir the mixture until all ingredients are well combined and the consistency is smooth and creamy. Pour the sweet potato mixture into the prepared baking dish.
Pecan Streusel Topping
- In a medium bowl, combine flour, brown sugar, and chopped pecans, then cut in the cold butter with a pastry blender or your fingers until the mixture forms coarse crumbs.
- Evenly sprinkle the streusel topping over the sweet potato mixture in the baking dish.
Bake
- Bake for 25-30 minutes, or until the topping is golden brown and the sweet potato mixture is heated through.
- If the topping starts to brown too quickly, you can loosely cover the casserole with aluminum foil.
Serve
- Remove the casserole from the oven and let it cool for a few minutes before serving warm.
Notes
For extra flavor, add a pinch of nutmeg or cinnamon to the sweet potato mixture. You can assemble the casserole ahead of time and refrigerate it. Let it come to room temperature before baking, and add a few extra minutes to the baking time if needed.
