Preparation
- Preheat your oven to 350°F (175°C) and line a 5-cup muffin tin with paper liners.
- In a medium bowl, whisk together the all-purpose flour, baking powder, and salt; set aside.
Mixing
- In a large bowl, cream together the granulated sugar and softened unsalted butter until light and fluffy.
- Beat in the large egg until well combined, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined, being careful not to overmix.
Baking
- Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
- Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a cupcake comes out clean.
- Let the cupcakes cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
For best results, make sure your butter and egg are at room temperature. This helps create a smooth, well-emulsified batter. You can frost these cupcakes with your favorite buttercream or cream cheese frosting once they are completely cool.
