  • 1 cup all-purpose flour
  • 1.5 tsp baking powder
  • 0.25 tsp salt
Wet Ingredients
  • 0.5 cup granulated sugar
  • 0.25 cup unsalted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • 0.5 cup milk

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a 5-cup muffin tin with paper liners.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, and salt; set aside.
Mixing
  1. In a large bowl, cream together the granulated sugar and softened unsalted butter until light and fluffy.
  2. Beat in the large egg until well combined, then stir in the vanilla extract.
  3. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined, being careful not to overmix.
Baking
  1. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  2. Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a cupcake comes out clean.
  3. Let the cupcakes cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

For best results, make sure your butter and egg are at room temperature. This helps create a smooth, well-emulsified batter. You can frost these cupcakes with your favorite buttercream or cream cheese frosting once they are completely cool.
