Main Ingredients
  • 4 cups cooked chicken shredded
  • 2 cans canned great northern beans rinsed and drained
  • 4 cups chicken broth
  • 1 cup salsa verde
  • 1 can diced green chilies
  • 8 ounces cream cheese softened
  • 0.5 cup milk
  • 2 tsp cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Optional Toppings
  • shredded cheddar cheese
  • fresh cilantro chopped

Equipment

  • Large pot
  • Whisk

Method

Preparation
  1. In a large pot or Dutch oven, combine shredded chicken, rinsed great northern beans, chicken broth, salsa verde, and diced green chilies. Bring the mixture to a simmer over medium heat.
Cooking
  1. In a separate bowl, whisk together the softened cream cheese and milk until smooth. Once the chili is simmering, stir in the cream cheese mixture and cook until it is fully melted and incorporated.
  2. Add cumin, chili powder, garlic powder, onion powder, salt, and black pepper to the chili and stir to combine. Continue to simmer for 15-20 minutes, allowing the flavors to meld and the chili to thicken slightly.
Serving
  1. Taste the chili and adjust seasonings as needed. Serve hot with your favorite toppings such as shredded cheddar cheese and fresh cilantro.

Notes

For extra heat, add a pinch of cayenne pepper or a few dashes of your favorite hot sauce. This chili freezes well for future meals.
