Method
 

Preparation
  1. Wash and dry the apples thoroughly, then remove the stems and insert wooden skewers into the stem end of each apple.

Making the Caramel
  1. In a heavy-bottomed saucepan, combine the butter, brown sugar, heavy cream, corn syrup, and salt; stir over medium heat until the sugar dissolves.
  2. Increase the heat to medium-high and bring the mixture to a boil, stirring occasionally, until a candy thermometer reads 245°F (118°C).
  3. Remove the saucepan from the heat and stir in the vanilla extract.
Coating the Apples
  1. Dip each apple into the hot caramel, turning to ensure an even coating, then allow any excess caramel to drip off.
  2. Place the coated apples on the prepared baking sheet and let them cool completely at room temperature or in the refrigerator until the caramel sets.
