  • 2 lbs beef chuck cut into 1/2-inch cubes
  • 2 tbsp olive oil
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 cup beef broth
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp cayenne pepper optional
  • Salt and black pepper to taste

Method
 

Cooking Steps
  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add beef cubes and brown on all sides. Remove beef and set aside.
  2. Add onion to the pot and cook until softened, about 5 minutes. Stir in garlic and cook for another minute until fragrant.
  3. Return beef to the pot. Stir in crushed tomatoes, beef broth, chili powder, cumin, oregano, and cayenne pepper (if using). Bring to a simmer, then reduce heat, cover, and cook for at least 2 hours, or until beef is tender. Season with salt and pepper to taste.

Notes

For a richer flavor, you can simmer the chili longer, up to 4 hours. Adjust cayenne pepper to your desired level of spice. Serve topped with shredded cheese, sour cream, or chopped green onions.
