  • 2 medium Zucchini
  • 1 Bell Pepper
  • 1 Carrot
  • 2 cloves Garlic
  • 1 tsp Ginger
  • 1 tbsp Olive Oil
Sauce
  • 2 tbsp Soy Sauce low sodium
  • 1 tsp Sesame Oil
  • 1 tbsp Rice Vinegar
  • 0.5 tsp Sriracha optional, for heat
Garnish
  • 2 Green Onions
  • 1 tsp Sesame Seeds

  • Large skillet or wok

Method
 

Preparation
  1. Prepare the zucchini noodles using a spiralizer or vegetable peeler.
  2. Whisk together soy sauce, sesame oil, rice vinegar, and Sriracha in a small bowl to create the sauce.
Cooking
  1. Heat olive oil in a large skillet or wok over medium-high heat, then add sliced bell pepper and julienned carrot; stir-fry for 3-4 minutes until they are slightly tender-crisp.
  2. Add minced garlic and grated ginger to the skillet and stir-fry for 1 minute until fragrant.
  3. Add the zucchini noodles to the skillet, pour the prepared sauce over them, and toss gently; cook for 2-3 minutes until the zucchini is just tender but still firm, being careful not to overcook.
Serving
  1. Remove the stir-fry from heat, then garnish with chopped green onions and sesame seeds before serving immediately.

Notes

For extra protein, add cooked chicken, shrimp, or tofu. Adjust spice level to your preference.
